For tiered stands: tallest on top, medium in middle, small on bottom. Pick 2-3 colors. For tea: 2-3 cups per person, brew 3-4 pots.

My setup: 2 rectangular for mains, 1 round for gravy, regular platters for cold sides. Keeps hot food hot and cold food cold!
